It is important that the extraction process to obtain extra virgin olive oil does not exceed 82ºF because the best flavours and nutrients come from the slightest touch.

Extra virgin olive oil is produced by crushing the olive fruit and separating the oil from the pulp. Chemical solvents are never used in the extraction of extra virgin olive oil.
